Hello out there

So... I know I haven't been on here for quite some time. I just been overwhelmed with applying for scholarships and thinking about my future. But I have been trying new recipes and coffee drinks, which I would up load. With everything going on I didn't even realize that Christmas is only next week, and I am definitely trying to get into the Christmas spirit. This will be my last week of the café until the New Year. So please, if anyone has any suggestions of Specialty Coffees, I'm always open to new ideas :)

Finger lickin' goooood

So I thought I'd give ya'll a little new recipe to try over the holidays, very delicious!

Candy Cane Hot Chocolate

·        3 cups confectioners' sugar, sifted

·        2 cups unsweetened cocoa powder

·        12 cups whole milk

·        2 teaspoons pure vanilla extract

·        1 teaspoon kosher salt

·        8 ounces dark chocolate, finely chopped

·        24 peppermint candies, crushed (about 1 cup), for serving

·        3 cups mini marshmallows, for serving

·        2 cups peppermint schnapps, optional, for serving

Directions

1.      Whisk together the sugar and cocoa powder in a 6-quart slow cooker. Turn the cooker to high, and slowly whisk in the milk to prevent lumps from forming. Add the vanilla and salt, cover and cook for 1 1/2 hours. The sugar and cocoa powder should be completely dissolved.

2.      Whisk in the chopped chocolate a little at a time until it is all incorporated. Replace the lid, and cook until thickened, 30 minutes more.

3.      Turn the cooker to warm, and serve with small bowls of the peppermint candies and mini marshmallows and a small pitcher of schnapps, if using. For minty cocoa, let a few teaspoons of the peppermints melt in an 8-ounce cup or add 2 tablespoons of schnapps.

something to read for the hell of it.

Sooooooo... I had a very delightful weekend. Spent the entire weekend baking, and watching my all time favourite show Greys Anatomy. Anyway, this weekend I accomplished my life long goal, Homemade Spice Cake. My grandfathers favourite piece of Christmas treats, and it was simply amazing. He had requested it for quite some time, and even now that he is gone I still made it, because that's just something I felt like I had to do.... I don't know, I guess its the little things that matter most. I also got to make my favourite Christmas cookies, and their oh so goooood I think I might have to share.

Just because my teacher told me to post something

Yesterday was god awful, today is awful, and hopefully tomorrow is better.. Sunday's aren't for drinking, and Monday's shouldn't start with a hangover! Wednesday's coffee special might be hut choco! : )

I just need to write.

When life knocks you down and even coffee can't fix it, what do you do? There is no such thing as love in my heart, and although there is ice in my veins I do believe faith runs through me too. I don't know how far faith will go with me, but giving in never did cross my mind. I know this blog is suppose to be about food and coffee, but sometimes I just need to write. This is not the weekend I expected it to be!
